why do many sakugologists hate on ufotable?

Most of them think their digital team adds too much composite/CG on the animators' work, which is a debatable but understandable reason.

their special effects work is amazing. nothing like the stuff that's truly hate-worthy, i.e. the stuff you see in transformers and a bunch of superhero movies
Well, it's a matter of personal taste, really. A lot of people like the way those movies look too! I don't know if I would consider any different approach to be hate-worthy beyond each person's own opinion.

I wouldn't say that Ufotable is hated by very many people though. Their highlights do pretty well vote-wise on this site, for starters. I think in the cases where you are seeing "hate" for them, it's probably at least partly in reaction to the way that fans outside of this community treat them. They are regularly championed, by general anime fans(i.e. not into sakuga), as the best animation studio out there because all of their shows are "immaculately animated"(UBW is considered the most well-animated show of all time on a lot of lists, for example).
To people who've been studying animation for a while, this could be a little irritating because a lot of what the fans are unknowingly praising them for is art design, compositing, and CG work, and they are regularly covering up pretty basic key animation with lots of digital special effects. There is definitely good work there too, and that also regularly gets(arguably) covered up by lots of digital effects, but in a community like this, digital special effects aren't what people are looking for.
