the compositing process
can somebody please explain what does the dop exactly do in the anime making process and how are they different from the vfx artist?

As far as I can tell (keep in mind, I'm no expert on this either), the DoP is the one that oversees the overall style of the show or movie's composite, while the VFX artists are the ones who execute the effects you see in the final product.

well, the other day I was watching B: the beginning and in the ed there were both a "compositing manager" and a "vfx director" credited. how are their roles different from each other?

I'm not 100% sure, so someone correct me if I'm wrong. But the VFX director is just the one to make sure they get executed the way the DoP wants them to and corrects the work when needed. Think of it like an animator & Animation Director-type scenario.
